Cooking method: oven, roasting dish. 

ingredients:

6 large, peeled carrots
3 celery stalks
1/2 pound fingerling potatoes
2 1/3 yellow onions, divided
1 garlic bulb plus 6 peeled cloves, divided
2 tablespoons extra-virgin olive oil, divided
3 tablespoons kosher salt, divided
2 tablespoons freshly ground black pepper
1 (4-pound) whole chicken
1/2 fresh lemon
3 sprigs fresh thyme
3 cups chicken stock
1/2 fresh lemon
1/2 bunch fresh parsley
1/2 cup (1 stick) unsalted butter
1 rustic Italian or baguette
2 cups each red leaf lettuce, butter lettuce and green leaf lettuce
1/3 cup Balsamic Dressing

 

instructions:

Preheat the oven to 425 degrees F.

Step 1) Start by very roughly chopping your carrots, celery, potatoes. and 2 of your onions. Aim for around 2 inches per chunk.
 
Step 2) Cut the garlic bulb in half. 

Step 3) Lay everything down in a large roasting dish and slather with 1 tablespoon of the olive oil Season with salt and pepper and shake everything around.

Step 4) Place your chicken breast side up on top of your vegetables. Stuff with the remaining third of an onion, the lemon, and the thyme. 

Step 5) Slather generously with the remaining olive oil, then season with kosher salt. 
Note: The method of seasoning the chicken is relatively important- take almost a small handful of salt and slowly sprinkle it from high above so the falling salt
spreads out evenly covers the surface of the chicken. 

Step 6) Once you’ve fully covered the exposed parts of the chicken, moved around the wings and drums to season underneath and hidden areas.

Step 7) Add the chicken stock to the bottom of your roasting dish and place it in the oven. Roast for about 1hour, or until the internal temp reaches 165°F.

Garlic Butter: 

Step 1) While the chicken is cooking, put the garlic cloves, the leaves of the parsley, 1tablespoon of salt, and the butter, cut into quarters, into your food processor and blend until the mixture reaches a soft whipped consistency. 

Step 2) the baguette in half lengthwise and slather your garlic butter on both sides.

Once the chicken is done, remove it to let it rest, then and add the garlic bread to the oven. Remove when the butter is melted and the bread is golden brown, 7 to10 minutes

In a salad bowl, mix your spring mix with the Balsamic Dressing

Carve the chicken and plate with salad, veggies, and garlic bread, spooning heavy amounts of the juices from the bottom of the roasting dish onto your plate.
This broth is incredibly flavorful.
